We all lead these incredibly busy lives. Seriously, for me anyhow, I have a front row seat up on Ozzy’s train when it comes to life. I won’t bore you with the details but I will say, dinner can get a little dicey at times. I’ve made it a mission to have some tasty, healthy, & fast recipes for the nights it takes all my willpower not to pull into the Rubio’s parking lot. So here is 1 of my all time fav go-to recipes. Enjoy y’all!
Bang Bang Shrimp Wraps
1 lb. shrimp, peeled and deveined
3 tbs. plain greek yogurt
1 ½ tbs. sweet chili sauce
1/2 -1 tbs Sriracha (depends on how much bang bang you want)
Heat a grill pan or skillet to medium-high heat and spray with cooking spray. Combine yogurt, sweet chili sauce, and sriracha in a small bowl, mixing well, and set aside. Place shrimp in pan and cook 2-3 minutes on both sides, just until they start to curl and are opaque. Remove from heat and toss in bowl with sauce. To make wraps: take a romaine leaf, top with about 3-4 shrimp, a little shredded carrot, some green onion, and a squirt of lime juice. Serve with cilantro lime brown rice for a complete meal.
